Nothing says summer like garden-fresh zucchini and juicy tomatoes. This grilled zucchini & tomato salad is the perfect seasonal side — light, colorful, and full of bold flavor. With fresh basil and a splash of lemon, it’s the kind of dish that elevates any summer meal without adding heaviness.

INGREDIENTS

Grilled zucchini and tomato salad with fresh basil and parsley, served as a light summer side dish with lemon.
  • 2 medium zucchini, sliced into rounds

  • 1 cup cherry tomatoes, halved

  • 1 tbsp fresh basil, chopped

  • 1 tbsp fresh parsley, chopped

  • 1 tbsp fresh lemon juice

  • 1 tsp olive oil

  • 1/4 tsp pink Himalayan salt

  • 1/8 tsp black pepper

  • 1/4 tsp garlic powder

  • 1/4 tsp smoked paprika

INSTRUCTIONS

  1. Preheat grill (or grill pan) to medium-high heat.

  2. Toss zucchini slices with olive oil, salt, pepper, garlic powder, and smoked paprika.

  3. Grill zucchini for 2–3 minutes per side until tender with light char marks.

  4. In a bowl, combine grilled zucchini, cherry tomatoes, basil, and parsley.

  5. Drizzle with lemon juice, toss gently, and serve warm or chilled.
