Nothing says summer like garden-fresh zucchini and juicy tomatoes. This grilled zucchini & tomato salad is the perfect seasonal side — light, colorful, and full of bold flavor. With fresh basil and a splash of lemon, it’s the kind of dish that elevates any summer meal without adding heaviness.
INGREDIENTS

2 medium zucchini, sliced into rounds
1 cup cherry tomatoes, halved
1 tbsp fresh basil, chopped
1 tbsp fresh parsley, chopped
1 tbsp fresh lemon juice
1 tsp olive oil
1/4 tsp pink Himalayan salt
1/8 tsp black pepper
1/4 tsp garlic powder
1/4 tsp smoked paprika
INSTRUCTIONS
Preheat grill (or grill pan) to medium-high heat.
Toss zucchini slices with olive oil, salt, pepper, garlic powder, and smoked paprika.
Grill zucchini for 2–3 minutes per side until tender with light char marks.
In a bowl, combine grilled zucchini, cherry tomatoes, basil, and parsley.
Drizzle with lemon juice, toss gently, and serve warm or chilled.
