INGREDIENTS

Servings: 4

1 lb extra-lean ground bison

½ cup finely chopped onion

½ cup finely chopped mushrooms

¼ cup almond flour

1 large egg

2 cloves garlic, minced

1 tbsp fresh parsley, chopped

1 tsp fresh thyme, chopped

1 tsp fresh rosemary, chopped

1 tsp pink Himalayan salt

½ tsp black pepper

2 tbsp tomato paste (no added sugar)

1 tbsp balsamic vinegar

INSTRUCTIONS

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

  2. In a large mixing bowl, combine bison, onion, mushrooms, almond flour, egg, garlic, parsley, thyme, rosemary, salt, and pepper. Mix until well combined, but don’t overwork the meat.

  3. Shape the mixture into a loaf on the prepared baking sheet.

  4. In a small bowl, whisk together tomato paste and balsamic vinegar. Spread evenly over the top of the meatloaf.

  5. Bake for 35–40 minutes, or until the internal temperature reaches 160°F (71°C).

  6. Remove from oven, let rest for 5 minutes, then slice and serve.
