1 lb extra-lean ground bison
½ cup finely chopped onion
½ cup finely chopped mushrooms
¼ cup almond flour
1 large egg
2 cloves garlic, minced
1 tbsp fresh parsley, chopped
1 tsp fresh thyme, chopped
1 tsp fresh rosemary, chopped
1 tsp pink Himalayan salt
½ tsp black pepper
2 tbsp tomato paste (no added sugar)
1 tbsp balsamic vinegar
INSTRUCTIONS
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a large mixing bowl, combine bison, onion, mushrooms, almond flour, egg, garlic, parsley, thyme, rosemary, salt, and pepper. Mix until well combined, but don’t overwork the meat.
Shape the mixture into a loaf on the prepared baking sheet.
In a small bowl, whisk together tomato paste and balsamic vinegar. Spread evenly over the top of the meatloaf.
Bake for 35–40 minutes, or until the internal temperature reaches 160°F (71°C).
Remove from oven, let rest for 5 minutes, then slice and serve.
