INGREDIENTS

Servings: Makes 9 bars (Servings size: 1 Bar)

1 ½ cups almond flour

1 scoops Vanilla protein powder

1 tablespoon tapioca flour or arrowroot starch

¼ teaspoon baking soda

¼ teaspoon pink Himalayan salt

½ teaspoon cinnamon

¼ cup melted coconut oil

⅓ cup pure maple syrup

2 large eggs

1 teaspoon vanilla extract

⅓ cup chopped pecans (plus a few extra for topping)

INSTRUCTIONS

  1. Preheat oven to 350°F (175°C). Line an 8 × 8 inch baking pan with parchment paper.

  2. In a medium bowl, whisk together almond flour, protein powder, tapioca flour, baking soda, salt, and cinnamon.

  3. In another bowl, whisk melted coconut oil, maple syrup, eggs, and vanilla until smooth.

  4. Combine wet and dry ingredients, mixing until just combined. Fold in chopped pecans.

  5. Spread batter evenly into the prepared pan and sprinkle with extra pecans.

  6. Bake 18–22 minutes, until golden around the edges and set in the center.

  7. Cool completely before slicing into 9 squares.
