INGREDIENTS

3 oz extra-lean ground bison
1 cup broccoli florets
1/2 cup diced zucchini
1/2 cup red bell pepper, chopped
1/2 cup cauliflower florets
1 tsp olive oil
1/4 tsp smoked paprika
1/4 tsp garlic powder
1/4 tsp pink Himalayan salt
1/8 tsp black pepper
INSTRUCTIONS
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Toss broccoli, zucchini, bell pepper, and cauliflower in olive oil, smoked paprika, garlic powder, salt, and pepper. Spread evenly on the baking sheet.
Roast vegetables for 18–20 minutes, tossing halfway through.
Meanwhile, heat a nonstick skillet over medium heat and cook bison until browned and fully cooked, about 6–7 minutes.
Serve roasted veggies topped with bison.
