
Banana Cinnamon Protein Pancakes (Yes, Pancakes Can Keep You Full)

Pancakes usually get a bad rap, right? You eat a stack, feel great for an hour, then you're starving and reaching for a snack. These are not those pancakes. They taste like a warm, cinnamony treat, but they're built to actually keep you full, because they're packed with protein.
The little trick that makes them work is cottage cheese blended right into the batter. You don't taste it, but it melts in and adds a ton of protein, no curds, no weirdness, just fluffy pancakes that hold you over.
Banana Cinnamon Protein Pancakes
Serves 1 (makes 3 pancakes)
Per serving (estimate): 335 calories, 28g protein, 9g fat, 34g carbs
Ingredients:
1/2 small ripe banana, mashed
1 egg
2 large egg whites
1/2 cup cottage cheese
3 tbsp gluten-free rolled oats, ground into flour
1/4 tsp baking powder
3/4 tsp cinnamon
1/4 tsp vanilla extract
Avocado oil spray
Directions: Blend the banana, egg, egg whites, cottage cheese, oat flour, baking powder, cinnamon, and vanilla until completely smooth. Blending is what melts the cottage cheese right in, so you get all the protein and none of the curds. Heat a lightly sprayed skillet over medium-low and cook 2 to 3 minutes per side, until golden. Serve warm with a dusting of cinnamon or a handful of fresh berries.
A little tip: keep the heat medium-low. These are protein-rich, so they brown faster than regular pancakes, and low and slow gives you that perfect golden outside.
