I love how easy this recipe is and with the onions and garlic...it's so good! Beets are sweet and have a mild touch of earthy flavor and they are so good for you! This recipe is delicious as a side or spoon them over some cottage cheese. Yum!
Ingredients:
4 large beets peeled
3 tbsp extra virgin olive oil
1 large red onion, roughly chopped
3 cloves garlic, minced
1 tsp fine sea salt
1/4 tsp freshly ground black pepper
1 1/2 cups vegetable broth
Cottage cheese for serving (optional)
Directions:
1. Cut the beets into half inch cubes. Cut them into 1/2 inch disks, then into 1/2 inch matchsticks, then 1/2 inch cubes.
2. Heat the olive oil in a large skillet over medium heat. Add the onion and saute until almost translucent.
3. Add the garlic and saute for another 1-2 minutes to bring out the flavors.
4. Add the beets and cook for 5-7 minutes to fully coat them with the onion, garlic, and oil, stirring occasionally so they don't burn.
5. Pour vegetable broth over beets and bring broth to a boil. Once at a boil, reduce heat, cover and simmer until beets are tender. About 35 minutes.
6. Uncover the pan and cook until the liquid has reduced by half, about 10 minutes more.
7. Season to taste with salt and pepper and serve immediately. You can eat alone as a side dish or over cottage cheese.
