INGREDIENTS:
1/4 cup gluten-free oatmeal (blended into oat flour)
1/4 cup pure pumpkin puree
1/4 cup liquid egg whites
1 tsp baking powder
DIRECTIONS:
1. Preheat oven to 350 degrees.
2. Add all ingredients to a mixing bowl until well combined.
3. Spray a mini loaf pan with nonstick spray.
4. Pour batter into pan.
5. Bake for approx. 20 minutes. Do not over bake. Cooking times may vary depending on oven. Test center with toothpick until it comes out clean. Add sugar-free chocolate chips if desired. Macros below do not include chocolate chips.
I only use Devotion protein powders in my baked goods. They taste amazing and are super easy to bake with. If using a different protein powder the results may not be the same.
