I love caramel it's probably my favorite of sweet things but I don't want the sugar. This one is made of dates and I love it more than your traditional caramel. No refined sugar and it's high in fiber and antioxidants! The kids love it too! Win win!
INGREDIENTS:
2 cups of pitted dates
1 cup of whole fat coconut milk (the can version - equal parts of the liquid and solid)
1/2 tsp pure vanilla extract
1/4 tsp cinnamon
pinch of salt
DIRECTIONS:
1. Soak dates in hot water for 15 minutes then strain.
2. Add to blender dates, coconut milk, vanilla, cinnamon, and salt.
3. Blend till smooth.
4. Store in mason jar in refrigerator for up to a week.
