I love tuna salad but this one is my favorite! It's great on crackers or make it into a wrap or sandwich.
Ingredients:
2 jars of tuna
2 celery sticks
1 cup fresh spinach
2 green onions
2 tbsp of capers plus some of the juice
1/4 cup of fresh dill
Juice of 1 lemon
1/2 cup of broccoli sprouts
2 tbsp tahini
1 clove garlic grated
1 tbsp dijon mustard
Salt and Pepper to taste
Directions:
1. Add all ingredients to a food processor except for tuna. Make sure the garlic is grated before adding to processor. Blend till smooth.
2. Remove half of the mixture from the processor and place in a bowl.
3. Drain oil/water from jars of tuna and add tuna to processor.
4. Process together tuna with mixture until your desired consistency. Add more tahini if necessary.
5. Place in bowl with other half of mixture and stir together.
